Valentines Day Breakfast

Happy Belated Valentines Day! It's a cold, gray, icy day here in North Carolina. Too icy to drive to work and a perfect opportunity to tell you all about my latest cooking success thanks to The Three Sisters Bake cookbook.
I hadn't really planned on making a special Valentines breakfast for the boys, and honestly it may actually have been a way to postpone going to the grocery store, but I ended up making the Blueberry Pancake Stack yesterday. I purchased blueberries last week -- I've been anticipating berry season lately (and it's still a couple months away!) so I bought some. Not local, and not that sweet, they were perfect for making the blueberry compote. That is the first step in the process so that it has a chance to cool down a bit before serving.

As soon as the mixture started bubbling the whole kitchen smelled like blueberries. It was wonderful!! Once it was done, I set it aside to cool down a bit.

On to the pancakes themselves. All the ingredients are things that I normally have on hand. The only substitution I made was using skim milk instead of whole milk. And, I used a bit more milk than called for in the recipe. The batter was really thick, so I added more to thin it out a bit and make it easier to pour out onto the skillet. I just eye-balled it, so am not sure how much I actually added. The first batch looked great.

I have not mastered the art of perfectly round pancakes. Mine are always a bit wonky - mostly because I often flip them too soon - even though I KNOW I should wait until they start to bubble on top. These pancakes (without the compote) were good - with just a hint of sweetness to them. Which is good, because the compote is really, really sweet!! Once assembled they looked fantastic and scrumptious.

My son Nick was a bit skeptical at first,and I was sure he'd bypass the blueberries for maple syrup. He surprised me by going for the blueberries. Joe (my husband) is always a good sport about trying things so no surprise there when he had the blueberries too! Both of them LOVED this breakfast!! Honestly, I did too! A real treat. As The Three Sisters say in their book "What could be better than eating sweet treats first thing in the mornining?" Well, not much!
I got 13 pancakes out the batter, and about 4 generous servings of the compote. In the end, there was just one lone pancake . . .

In short, if you have this book you should make this recipe next weekend!! If you don't have the book, buy it and make these pancakes!
